The vineyards are divided between several different parcels with Southern
exposure, which ensures maximum exposure to the sun. The vines are planted on slopes of clay and chalk with good natural drainage. The grapes are all picked by hand with 30% destalked. There is a long
maceration and fermentation of about 24 days, under temperature control and with
gentle daily pumping over the must by pneumatic pressure. 30% of the press wine
is incorporated in the final blend. Wonderful deep purple colour, aromas of black fruits, leather and spices.
Powerful but ripe tannins in the mouth. Excellent length. This wine will be packaged either in 6 or 12 bottle cases.
